Lucariello, onion confettura and burrata
Lucariello are a variety of tomatoes grown in the Sarnese-Nocerino zone of Campania, which also produces San Marzano DOP, the tomatoes of choice for traditional pizzaioli. They are small, yellow, pear-shaped tomatoes with a thick skin and firm flesh. Their subtle flavour is used to accompany delicate ingredients on pizze. Lucariello are produced only by a handful of growers and all the production is snapped up each year by eager pizzaioli. If not available, use small yellow tomatoes.
